On Friday, April 12th, Bacoli sees the reopening of Caracol, the Michelin-starred restaurant of the Cala Moresca resort. At the helm is Chef Angelo Carannante, with his contemporary Mediterranean style, reflecting the allure of the location. The dishes are indeed based on his story and that of the Phlegraean territory.

“I have always focused on research and knowledge of raw materials,” explains Carannante, “with an emphasis on short supply chains and indigenous crops.”

This year also marks a significant return, that of the restaurant manager and sommelier Ciro Sannino. His wine cellar is a journey through Italy, enhancing regional wines and emphasizing the territory by revisiting old vintages to observe the evolution of these lands. Digestives and liqueurs for after the meal are macerated directly at Caracol. The labels range from Europe to the rest of the world, with a particular focus on France, through precise “food pairing”. A major novelty this year are the personalized cocktails that will be created based on the tastes of the customers, during tastings. In the dining room, the maître and sommelier Giannantonio Scotto Di Vetta is confirmed. A unique atmosphere, sea, twenty covers with dishes representing the Phlegraean Fields, as entrepreneurs Roberto Laringe and Alfredo Gisonno have always wanted.

A success achieved in a short time, the two, after many important experiences in the hotel and restaurant sector, united by a solid friendship, in 2016 inaugurated their gourmet restaurant and in less than two years from its opening, they received a Michelin star. “At Caracol,” comments Laringe, “every reopening always conveys great emotion. Here reigns the culture of healthy hospitality, which fortunately is still alive, combined with an ethical and conscious cuisine. We try to add peculiarities and details to the Caracol experience. We are always restless and are already working on a special restyling, which will give the place an even more romantic look.” Here you can breathe the soul of the south; the venue, with its elegant and refined design, owes its name to the peculiarity of the ceiling that resembles a small snail: caracol, in Spanish, with a terrace suspended between land and sea, and breathtaking views.

Caracol in Bacoli is located at Via Faro 44, it is open only in the evening from Tuesday to Friday, while on Saturday and Sunday also for lunch. The day off is Monday. For information: tel. 081 523 3052.
